I know that it is best not to over boil or steam veg as you lose vitamins and minerals. Is this the same if you are making soup as the veg are boiled until tender?

it differ from the type of the mineral and vitamin you are asking about , there are many types of vitamins some are lost when just some amount of heat is applied and some are stable even in high temperatures .
sorry if it not a satisfactory answer .

Microwaving is actually a good way to cook vegetables because vegetables leak vitamins that are water-soluble, and the microwaving doesn’t damage the vitamins. You still will find some vitamins in the soup if you cooked in in water on the stove because they leak out into the water, not all of the vitamins are cooked out.
